Iceblocks for Adults: Piña Colada

Ingredients:

Pineapple (the sweeter, the better)

Coconut liqueur of your choice

 

Equipment:

Jug

Blender

Iceblock moulds

Funnel for pouring (if needed)

 

Method:

Dice pineapple (leave out the core) and pulp with the blender. I use a stick mixer and pulp it in the jug that I’m going to mix in and pour from.

Add coconut liqueur to taste. I use 1:3. So, for example, for 600ml pineapple pulp add 200ml coconut rum.

Pour into iceblock moulds. Don’t overfill as the mixture will expand and the lids may pop off.

Freeze, eat, enjoy.
